While I occasionally apply stain or urethane with a brush, especially on very small projects, I regularly use my spray guns to apply stain and urethane on wood trim, window sashes, doors and furniture. I shake my poly for the first coat, but always add mineral spirits, which slows down the drying (open time) and allows the bubbles time to escape. If you absolutely have to do it alone, just apply a coat of dye and immediately after wipe the whole piece with a slightly dampened rag with denatured alcohol, and work to blend any lap marks you may have created.
