When we moved into our house a few years back, we had two hot pink couches and a mattress on the floor. I think that being able to refinish and restore wood furniture is what makes it so great. It’s also difficult to sand varnish from round or decoratively curved areas such as turned table legs. We also tend to prefer liquid stain (like the one we chose above) over gel stain because we have more experience working with it, but we’ve heard that gel stain can also be amazing- especially for items that can’t be thoroughly sanded or those on a vertical plane (like wood trim) since the liquid stain can be too runny and messy.
I don’t like a solid color because you see every mark, so tomorrow when it’s all dry, I’m doing a colorwash over the top with a metallic bronze or copper. As far as going lighter, the only way you would be able to do that is the old fashioned way (or painting)…sanding completely down to the bare wood and restaining. Reason being, as you mentioned, water based products can raise the grain of the wood.
Also, you will NEVER get all the old finish out of decorative carvings or turned legs (like this table) with sandpaper…not happening! Water-Based Facts: This can be either a pro or a con, but water-based finishes don’t change the color of the wood at all.

Since you’re going for a shabby rugged look with the edges sanded down to the wood, I would just be sure to really rough up the wood thoroughly before applying paint since you’re skipping the priming step. Since the moment I gained possession of this table 9 years ago, I knew one day I would love to refinish it, as the tabletop was very scratched up and had water rings after many years of use.
