I work surfaces flat and square with a plane, then sand with 320 grit garnet paper and a small-orbit finishing sander. You want to sand down the wood until you’ve reached anywhere between 150 and 180-grit. The two-step finishing system permits independent control over each step – the depth of colour and the level of protection. You will remove virtually all the old wax this way, so it will not build up. Repeat when the finish looks dull or dirty – once a year is adequate for furniture in most households because paste wax does not evaporate as liquid polishes do. If a brush application is to be used, it is recommended that a presealer be used prior to staining. French polishing is a finishing method of applying many thin coats of shellac using a rubbing pad, yielding a very fine glossy finish. Let the stain dry completely before finishing the wood – about half an hour for alcohol-base stain and about one hour for methanol- or other spirit-base stain. The most relevant product to finishing is Zinsser’s SealCoat , which is simply a #2 cut of shellac, (and despite its name, can be used as more than a sanding sealer; it can also be used as a standalone wood finish). I experimented with a couple of doors where I sanded down to the bare wood and in my opinion the lightly sanded ones turned out better. Keep in mind that if you don’t sand the wood well enough and the flaws still show after you’ve applied the stain or finish, you can always remove the stain or finish at any time using a paint-and-varnish remover (or simply paint thinner for stain alone) and start over. But after two tries with Waterlox, and after living with my countertops for 2.5 years, I realized that food safety really isn’t a concern for me. I simply do not ever put food on my countertops.
