The shrinkage that will occur in this air-dried wood after it’s brought into a climate-controlled environment won’t necessarily be a deal-breaker for you; just don’t expect boards to stay flat and joints tight. If you get the water content down to some percentage as measured by a probe and it feels dry to the touch, you can seal it on all sides and then it shouldn’t matter how much water is in the wood since it will be sealed in. You also want to avoid over drying or drying too fast. If a tree has just been cut down, or there has been recent storm damage, it’s best to process the logs into lumber as quickly as possible; doing so will help to open up the wood and aid in drying, which can prevent rot or stain from marring the wood.
