Gluten Free Oatmeal Cookies; Deborah Peters

If you’re looking for great gluten free desserts, here’s one you gotta try. It’s a bit in the “safe” zone because of the pre-mixed flour options. These here shown, gluten free Bisquick and Pamela’s gluten free are great for gluten free pancakes – and then I happen to notice you can use them in place of recipes that call for flour. Since the pancakes were great and only a very small amount of flour was needed for the oatmeal cookie recipe, 1.5 cups – I felt pretty good going in. The cookies came out great! Use this amount of gluten free flour; my first batch I didn’t use that much and the cookies needed it. Though they were good, the cookies came out more like a florentine type as oppose to oatmeal cookie, don’t be afraid to use this amount of flour! This is one of those gluten free foods that won’t be too bread-like or taste like garbanzo beans, you’ll love them. I’m certain the peanut butter cookie recipe with oats is a hit too, going to try that next!

    I tried these and they are WONDERFUL! I actually preferred the chewy consistency of them compared to the regular kind of cookies. YUM!
