Cutting Board

As I mentioned above, we were required to use plastic cutting boards when catering. If possible, always use a clean, separate, color-coded cutting board for fresh vegetables, fruits, breads, and other food that will not be cooked prior to eating. It’s best to have a separate board for your raw meats, and another for your vegetables and other foods to avoid cross contamination. I usually recommend sanding or using a shop made router sled to flatten the board.
