I built the smokhouse in 06, I can’t remember the exact size of the dowels.. They do need to be fairly thick to hold up the heavy meat without sagging in the middle. I personally don’t, but my internal temp of the smoker once the meat was installed dropped like a rock. You can either build baffles, or just plan on rotating the meat in the smoker every hour or so.
